Some years back, the folks at Mas de Daumas Gassac began working with a neighboring cooperative in Sête to produce fun, full flavored organic wines from the surrounding countryside and rocky hillsides of the Langudoc-Rousillon in Southern France. From vineyards near the oyster beds on the Mediterranean Sea, this wine is a classic example of why Picpoul is known as the “Southern Muscadet”.
The soil is limestone and gravel, and the higher elevation and proximity to the cool sea breezes make for a wine with high-level freshness.
Handpicked in small bins, macerated for 2 days with spontaneous fermentation and then aged 6 months in tank.
This Picpoul is giving bright lemon, melon, tart green apple, citrus blossom, savory herbs and saline.
Crisp and zingy, this briny white provides the perfect backdrop for fish, fresh oysters and other shellfish as well as salty fried foods like calamari, popcorn chicken and crispy spring rolls.
