Gently smoked over sugar maple wood, this trout is ideal for a creamy pasta sauce or as an hors d’oeuvre mixed with some lemony mayo, tarragon, and minced shallot on top of your favorite cracker. We source our trout from McFarland Springs, which is sustainably farmed in Northern California, and then smoke it to enhance its naturally sweet flavor and light, firm flesh. –Sam M
