Arguably the best tasting and most sustainably raised turkey available. These birds are direct descendants from a wild flock discovered and nurtured by legendary rancher, Frank Reese. He single-handedly revitalized these heritage breeds 60+ years ago and has been raising them on a vast Kansas prairie ever since at his famed Good Shepherd Poultry Ranch. These birds are anatomically different than broad-breasted turkeys, so they both taste and cook differently. The breasts are a bit smaller than a broad-breasted turkey, but heritage birds are rich and full of flavor. -Sam M

Turkeys are deeply chilled to 28 degrees, so the turkey will have some firmness but it will not be frozen.

To thoroughly thaw your turkey before cooking, keep in refrigerator for 1 to 2 days for turkeys 8-15 lbs, and 3 days for turkeys 16+ lbs. Add extra time if you’re going to brine your bird.

Check your turkey the day before brining or cooking and if it’s still a bit hard, submerge it in COLD water, in its original packaging, for 1 to 4 hours, changing the water every 30 minutes.
