Turkeys are deeply chilled to 28 degrees, so the turkey will have some firmness but it will not be frozen.
To thoroughly thaw your turkey before cooking, keep in refrigerator for 1 to 2 days for turkeys 8-15 lbs, and 3 days for turkeys 16+ lbs. Add extra time if you’re going to brine your bird.
Check your turkey the day before brining or cooking and if it’s still a bit hard, submerge it in COLD water, in its original packaging, for 1 to 4 hours, changing the water every 30 minutes.
