Tempranillo Perfidia

John Donaghue went from working as a skyscraper building engineer in San Francisco to making wines with Gideon Beinstock of Clos Saron, where he remained for several years, learning every aspect of winemaking from the vineyard to the bottle. Taking Gideon’s techniques of low-intervention wine making, Donaghue’s has produced his own wine production, Thee & Thou, locally on Treasure Island.

Location
Perfidia is blend of Tempranillo, Garnacha, Zinfandel and Graciano, all from vineyards out of the Clements Hills AVA in Lodi, California.

Production
The grapes were picked and vinified separately, fermented whole cluster with stems, punched down, pressed & barreled down hitting malolactic fermentation, then finally blended and aged for 45 months in used French oak barrels.

Tasting Notes
Notes of cherry, cedar, tobacco and graphite on the nose, transitioning to wild mushroom, tangy berry and plums rounding out the palate.

Pairing
Serve with aged cheese, mushroom pizza, hearty stews, or marbled cuts of meat like Ribeye
