Jacques Cattin and Axel Wulfken, the former manager of Champagne Moët & Chandon, are making exciting still and sparkling wines in Alsace, France. The Joseph Cattin estate, based in the village of Voegtlinshoffen, has the family’s roots dating back to the 1700s, with Jacques representing the 11th generation of the family.

Location
The fruit is from their prized parcel in Grand Cru, “Hatschbourg,” which sits very close to the winery itself. The Cattins also farm some of Alsace’s most prized Pinot Noir in the village of Steinbach.

Production
The grapes are destemmed and placed in a maceration vat for about 15 days, then the juices are moved to stainless steel vats for the end of the alcoholic and malolactic fermentation.

Tasting Notes
Light garnet in color with aromas of raspberries, black cherries, dark chocolate and a hint of smoke. On the palate it is harmonious with red fruit and cacao, finishing with velvety tannins.
